Recipe of the Week: Peanut Butter Power Pancakes

I love these quick pancakes in the morning. It really is just oatmeal in a different form.

  • 1/2 cup old fashioned oats
  • 1 egg white
  • 2 Tablespoons milk
  • 1 teaspoon cinnamon
  • 1 tablespoon peanut butter
  • 1 teaspoon agave nectar (or honey, maple syrup)
  • 1 banana (divided)
  • 1/2 cup sliced strawberries

Mix all ingredients together, using only half of the banana, chopped up. Heat skillet over medium-high heat. Coat pan with cooking spray. Drop “better” into pan and smooth into one even, 1/2 inch thick pancake. Cook 3 to 4 minutes on each side until golden brown and cooked through.

Serve with fresh sliced strawberries, banana, or fruit of any choice. I also like to spread a small amount of low fat whipped cream cheese on as well if we have it on hand.
