So this week is not the typical week for menu planning and grocery shopping since we normally spend time on Sunday to plan everything out and make our one trip to the grocery store. I got home late Sunday night from a long weekend, so this week had to be split into a couple trips, but such is life!
Monday: Taco Salad (the bf made a special Monday trip to the market to have a yummy, healthy dinner waiting for me)
Tuesday: Mediterranean Red Snapper with lemon basil whole wheat spaghetti, sauteed green beans
Wednesday: Lamb and shrimp kebabs with zucchini, bell pepper, onion, whole wheat pita, tzaziki, green salad
Thursday: Salmon Burger Salad
Friday: Black Bean Burrito, green salad
Saturday/Sunday: Who knows – 4th of July weekend = bf working and plans up in the air.
And here are the groceries we stocked up on for the week for lunches, dinners and snacks:
Included is Kashi Autumn Wheat cereal, Skinny Cow bars, chicken broth, black beans, Amy’s Bean and Rice Burritos, green beans, orzo, canned tuna, zucchini, red snapper, ground lamb, prawns, canned diced tomatoes, broccoli, tzaziki, nectarines, cherry tomatoes, frozen cherries, yellow onion, capers, and basil.
