After seeing Cafe 222 on The Food Network we knew we had to make a visit. How has this gem been here for 15 years and we have never been? I looked over the menu online and had no idea how I would choose from so many options. I went with Eggs Italia and it was an excellent choice!
Terryl shares this and other recipes on the Cafe 222 website and I also wanted to share it with you all here:
To a small saute pan preheated over medium heat add:
1 Tbs pesto
3 Tbs. chopped tomatoes
1/2 cup stale focaccia or french bread
Allow to cook for 1 minute until tomatoes are soft and bread has absorbed pesto
Add 3 slightly beaten eggs, allow to cook three-quarters of the way through. Add 2 Tbs. goat cheese, fold into mixture and allow to cook just until eggs are done. Plate and sprinkled with Parmesan cheese.
