Last night turned out to be a perfect fall evening at home. Homemade Cast Iron Skillet Pizza (one of my faves), and roaring fire and red wine. Aaron properly termed the pizza recipe “garbage pizza” because it contained pretty much everything we had in the fridge. That is one of the things I love about pizza – you can use whatever you have around the house. It is a great way to use up produce and leftovers. Of course, the other thing I love about pizza is the gooey melty cheese and carby crust!
The only thing I purchased for this pizza was a bag of spinach – everything else we already had. This was pretty much a freebie meal, but it was one of the best of the week! The pizza contained whole wheat pizza dough from Trader Joe’s that I had in the freezer, garlic, pesto, tomato basil sauce, onions, spinach, prociutto, mozzarella and fresh tomatoes. A couple notes – I love the addition of procuitto, it is very flavorful, so you get lots of flavor without have to use much, which saves calories. The entire pizza only contained 4 thin slices. I have started adding whole cherry tomatoes to pretty much anything I throw in the oven. The tomatoes get roasted and soft and almost create a sauce when you bite into them. Fresh sliced tomatoes on pizza make the end product watery, but the cherry tomatoes keep the moisture inside until you bite into them.
