Dude Food Transformed to Health Food

Who knew this bacon wrapped pork tenderloin from the Dude Food tasting…


Could turn into this healthy plate of pork tenderloin with sauteed carrots, spinach and whole wheat couscous.


A little bacon wrapped around some lean pork tenderloin never killed anyone and gives it so much flavor! I actually took the bacon off of the tenderloin, chopped about half of it up and sauteed it with onion, garlic, cooking spray and some carrots. Then I added three medallions of the pork to reheat while the couscous cooked. I added the spinach just a minute before everything was ready so it was just wilted.

I topped it all with some fresh shaved Parmesan cheese and it was perfection! I had thought this meal up earlier in the day and it turned out better than expected. This week we are eating through our leftovers from the Dude Food tasting, so I have been getting creative with my meals which as been fun. Plus, skipping a week at the grocery store is an added bonus!
