It’s All Greek to Me

Greek food is one of my favorite types of cuisine. I spent a week in Greece in 2004 and fell in love with the country, the people and their food! Aaron and I try to eat an entree salad once a week for dinner. It is a nice way to lighten up our dinners and balance out heavier meals.

When I was making this week’s meal plan, Greek salad came to mind. When I have a salad for dinner, it needs to be a pretty heavy duty salad with lots of goodies in it. Just lettuce and tomatoes won’t cut it. Some salad that fit this bill include taco salad, panzanella and now GREEK SALAD.

This is a great recipe and perfect for a warm spring or summer night (like tonight).

Shrimp Greek Salad with Creamy Lemon Caper Dressing
Serves 2

4 cups spring mix salad
1 romaine heart, chopped
1/2 cup cherry tomatoes, halved
1/2 cup English cucumber, sliced
1 roasted red bell pepper, thinly sliced
2 tablespoons capers
6 marinated artichoke hearts
16 large shrimp, cleaned and deveined
2 oz. crumbled feta cheese

Dressing

1 clove garlic, grated
2 tablespoons capers, chopped
1 tablespoon Dijon mustard
1/4 cup non fat plain Greek yogurt
Juice of half a lemon
Salt and pepper to taste

Divide salad ingredients evenly amongst two large plates, starting with a bed of the greens and then each of the other toppings. Season shrimp with salt and pepper. In a large skillet over medium high heat, cook shrimp 4 minutes of each side. Set aside.

In a jar, or blender bottle combine ingredients for the dressing. Shake well and place in fridge until ready to serve.

Top salad with shrimp and drizzle with dressing. Enjoy!

I really loved this dressing. I just made it up as I went, but it turned out great. This salad was a very satisfying meal and will definitely be repeated. Look at all that veggie goodness!
