A Picture is Worth a Thousand Words

But since you read this blog, you would rather READ, right? Good, because the recipe I want to share has no photos to go along with it. I was thinking this was just a simple recipe and not blog-worthy. That is, until it was gone! I figured the recipe by itself was better than nothing!

Pesto Chicken Goat Cheese Pizza
Whole wheat pizza dough
1/2 cup tomato basil sauce
1/4 cup prepared pesto
2 oz goat cheese
1/4 cup Parmesan cheese
1/2 cup cherry tomatoes, halved
1 1/2 cup fresh spinach leaves
1 chicken breast, grilled and cubed
Olive oil
Cooking spray
Salt and pepper

Let dough rest at room temp for at least an hour. Preheat oven to 400 degrees. Roll or spread pizza dough to 1/4 inch thick and place on cookie sheet sprayed with cooking spray. Drizzle with olive oil and season with salt and pepper. Spread tomato sauce on crust, all the way to edges. Pre-bake dough for 10 minutes.

Laye pre-baked dough with pesto, spinach, chicken, tomatoes, goat cheese and Parmesan. Bake for another 15-20 minutes until crust is crispy and cheese melted.

This was a tasty pizza. The concept was just to have the chicken, goat cheese and pesto but since we had the other ingredients on hand, I added to it. That is what I love about pizza. If you have dough and cheese, you can make it whatever you want.

  1. DELIGHTFUL…I’m a pizza lover. Have you ever tried grilling it? We do that all the time and it’s my favorite way…I recently posted a grilled pizza with lots of spring veggies and homemade pesto. Mmm now I’m hungry 🙂
