Cranberry, Cashew and Flax Granola

With the Girls on the Run Bake Sale happening tomorrow, there was a lot of baking going on in our house today.  Aaron’s mom, Jill, made 5 dozen peanut butter cookies, and a whole bunch of chocolate chip cookie bars.

Since I am not much of a baker, I decided to whip up a batch of granola for the bake sale. We will see if anyone wants to buy the healthy stuff when they have so many other goodies to choose from.  I made Cranberry, Cashew and Flaxseed Granola and it’s GOOOOD!  My recipe makes a ton, so you may want to adjust the quantities.

Cranberry, Cashew and Flax Granola
8 cups rolled oats
2.5 cups cashew pieces
1.5 cups flaxseeds
3/4 cup brown sugar
3/4 cup honey
1/2 cup vegetable oil
2 teaspoons Kosher salt
3 cups dried cranberries

Preheat oven to 250 degrees. Combine all dry ingredients except cranberries.  Mix well.  Add wet ingredients to dry and stir until well mixed. Transfer mix to cookie sheets, in a thin layer.

Bake for 1 hour and 15 minutes, stirring every 15 minutes.

When finished cooking, transfer granola to a large bowl and stir in dried cranberries and let cool.  Store in zip-top bags or airtight containers.

Note:  This recipe can be used as a base for all of your favorite granola mix ins.
