Healthy Broccoli Slaw

Last night, we had Cola Braised Pulled Pork Sandwiches. Traditional pulled pork is often served with coleslaw. I am not a big fan of cole slaw, but decided to make my own version last night. I made a few tweaks to up the nutritional value of this traditionally mayonnaise-laden side dish. I started with just 4 ingredients:

Here’s the recipe (numbers are rough)

1 bag broccoli slaw
Juice of 1 lemon
1/2 cup non fat greek yogurt
1/2 teaspoon caraway seeds
1 tablespoon apple cider vinegar
salt and pepper
drizzle of honey

Mix everything together, season to taste. Serve as a side dish with any summer meal, or on top of a pulled pork sandwich. Makes 4 servings.

To give you an idea, one serving of this broccoli slaw has about 45 calories while a 4.6 oz. portion of cole slaw at KFC is 180 calories.
