A New Easter Tradition?

Our Easter plans didn’t kick off until late afternoon, so we used it as an excuse to make a yummy breakfast and drink mimosas – of course.  After a long family walk, Aaron made Chilequiles and it was so good.

Tortilla chips, salsa verde, black beans, corn, bacon, cheese and a runny egg – can it get much better than that? Crunchy, chewy, gooey, dripy all at the same time.

    Where is this recipe? This looks like something we would love, especially because Alex will eat anything if you add bacon! Kind of like a huevos but with a twist. (ps – haha, i’m comment crazy today! Avoiding doing work…)
