A New Easter Tradition?

Our Easter plans didn’t kick off until late afternoon, so we used it as an excuse to make a yummy breakfast and drink mimosas – of course.  After a long family walk, Aaron made Chilequiles and it was so good.

Tortilla chips, salsa verde, black beans, corn, bacon, cheese and a runny egg – can it get much better than that? Crunchy, chewy, gooey, dripy all at the same time.

This recipe is a keeper! He should be posting it on his website soon – go check it out.

Where is this recipe? This looks like something we would love, especially because Alex will eat anything if you add bacon! Kind of like a huevos but with a twist. (ps – haha, i’m comment crazy today! Avoiding doing work…)

  3. Had this for the first time a couple of months ago and I love it – breakfast nachos, what could be better?
